Ingredients
  

  • 250 g mixed frozen vegetables
  • 2 garlic cloves crushed
  • 400 g can of lentils in water
  • 1 tin chopped tomatoes
  • 300 ml vegetable stock
  • 3 tsp oregano
  • 360 g vegetable pasta dry weight
  • Cheddar cheese grated, to serve.

Instructions
 

  • Measure out all the ingredients.
  • Add all the ingredients (except pasta) to the pan and mix well. Cook on a medium heat for 6-10 minutes, stirring frequently.
  • Blitz with a blender until the sauce is smooth.
  • If the sauce seems a little thick you can add some water or stock to thin it down.
  • Mix with cooked pasta.
