Ingredients
- 200 g Red Lentils
- 1 White Onion Chopped
- 3 Garlic Cloves Chopped
- 1 Large Tomato Chopped
- 100 g Spinach
- 100 g Peas
- 1/4 tsp Turmeric
- 1/4 tsp Ground Cumin
- 1/2 tsp Garam Masala
- 240 g Rice
- Greek/Soya Yoghurt
Instructions
- Measure out all the ingredients
- Wash the lentils, then tip into a saucepan with 1L water and boil.
- Once the lentils come to a boil, reduce the heat and allow to simmer for 25 minutes. Cover with a lid and occasionally stir.
- In another pan (make the base), fry the onions and garlic until softened; this could take 8 minutes on a medium-low heat.
- Then add the tomato and spices and cook for 5 minutes.
- Tip the base into the lentils saucepan. Add spinach and peas, then allow to simmer.
- Boil the rice, add turmeric for a yellow colour, and serve with some plain yoghurt.
- Serve food family style

- Place the curry into a small bowl or silicone cupcake cases, using cookie cutters shape out the rice and serve with yoghurt for younger kids.
- Pre-load teaspoons of the lentil sauce and yoghurt with a little rice and separate veggie chunks for babies.

Allergies: Dairy/Soya. You could use another plant based yogurt such as oat or coconut.
