Red Pepper Pasta

- Pasta of choice
- 1 red bell pepper
- 2 chicken breasts
- 1/2 carton tomato passata
- 1 medium onion
- Salt and pepper
- 1 tsp Dried oregano Optional
- 1/2 tsp sugar
- Olive oil
- Cucumber and carrot for garnish For garnish
- Haloumi
Instructions
- Measure all ingredients.
- Cut chicken breast in small bite-size pieces and cook in some olive oil using salt, pepper and oregano.
- While the chicken is cooking, roughly chop red pepper and onion.
- Once chicken is cooked, discard in a bowl and in the same pan add some olive oil and cook pepper and onion until they get nice and soft caramelised.
- When cooked, place in hand blended along with the tomato sauce, salt, pepper, oregano and sugar. Blend until smooth.
- In a separate pot, cook pasta as per package instructions.
- Place sauce into the same pan as before to reheat, along with cooked pasta and mix together.
- Add cooked chicken and mix.
- Optional: sprinkle with some more oregano!
- Serve with grated haloumi. Here is some serving suggestions!
