Red Pepper Pasta

  • Pasta of choice
  • 1 red bell pepper
  • 2 chicken breasts
  • 1/2 carton tomato passata
  • 1 medium onion
  • Salt and pepper
  • 1 tsp Dried oregano Optional
  • 1/2 tsp sugar
  • Olive oil
  • Cucumber and carrot for garnish For garnish
  • Haloumi


  • Measure all ingredients.
  • Cut chicken breast in small bite-size pieces and cook in some olive oil using salt, pepper and oregano.
  • While the chicken is cooking, roughly chop red pepper and onion.
  • Once chicken is cooked, discard in a bowl and in the same pan add some olive oil and cook pepper and onion until they get nice and soft caramelised.
  • When cooked, place in hand blended along with the tomato sauce, salt, pepper, oregano and sugar. Blend until smooth.
  • In a separate pot, cook pasta as per package instructions.
  • Place sauce into the same pan as before to reheat, along with cooked pasta and mix together.
  • Add cooked chicken and mix.
  • Optional: sprinkle with some more oregano!
  • Serve with grated haloumi. Here is some serving suggestions!


For Babies: Cut pasta into smaller pieces. Serve haloumi on the side along with carrot and cucumber sticks!
Allergies: Gluten & Dairy. You can substitute pasta with a GF alternative and haloumi with a dairy free cheese alternative.
