Veggie Frittata

Ingredients
  

  • 6 Eggs
  • Assorted veggies of your choice e.g., 1/2bell peppers, handful spinach, 2-4 tomatoes, 2-4 mushrooms
  • 1/3 cup Grated cheese optional
  • 1 tsp oregano
  • Handful Herbs such as chives or parsley
  • Salt and pepper to taste
  • Olive oil spray

Instructions
 

  • Prepare your chosen veggies by washing and chopping them into bite-sized pieces.
  • Lightly coat the air fryer basket with olive oil spray to prevent sticking.
  • Crack the eggs & spread the chopped veggies & herbs evenly in the basket.
  • Season with salt and pepper according to your taste.
  • If desired, sprinkle shredded cheese over the top for an extra touch of indulgence.
  • Place the basket in the air fryer and cook at 180c for about 13-15 minutes or until the frittata is set and the top is lightly golden. Want runny eggs try 10 minutes.
  • Once cooked, carefully remove the frittata from the air fryer and let it cool slightly before slicing. Add salad/vegetables to finish the meal of!
  • For babies cut into long strips for them alongside chopped salad!
