Tuna Burgers with Jacket Potatoes

  • For the burgers
  • 2 cans tuna
  • 1 medium zucchini
  • 1 egg
  • Mustard
  • Salt and pepper to season
  • 1 tsp Thyme
  • 1 tsp Paprika
  • Flour if needed
  • For the jacket potatoes
  • 3 medium potatoes
  • 1-2 tbsp Greek yoghurt per jacket potato
  • Salt and pepper to season


  • Measure out all ingredients.
  • Grate courgette & add to a plate, using a paper towel drain as much water as possible.
  • In a medium bowl add tuna, courgette, egg, mustard, salt, pepper, thyme and paprika.
  • Mix well and mould into a burger shape. Can add flour if needed to help. Set aside.
  • Cover potato in plastic wrap and cook in the microwave.
  • While potatoes are cooking, in a pan using some olive oil cook burgers until crispy on the outside.
  • Serve with adding some yoghurt on the potato.


Allergies: Egg, Dairy, Mustard and Fish. You can substitute egg with some whisked chickpea water or 1tbsp yoghurt of choice. Can also substitute yoghurt with a dairy-free alternative. Can omit adding mustard if allergic. Tuna can be substituted for any other fish or recipe can be made using minced meat in the case of a fish allergy.
Babies: Make tuna burgers smaller. Remove potato peel. Serve yoghurt on the side.
Serving suggestion- use cutters to make fun vegetable shapes! Add yoghurt or dip to silicone or cupcake case! 
Consume within 1-2 days.
