Tuna Burgers with Jacket Potatoes

- For the burgers
- 2 cans tuna
- 1 medium zucchini
- 1 egg
- Mustard
- Salt and pepper to season
- 1 tsp Thyme
- 1 tsp Paprika
- Flour if needed
- For the jacket potatoes
- 3 medium potatoes
- 1-2 tbsp Greek yoghurt per jacket potato
- Salt and pepper to season
Instructions
- Measure out all ingredients.
- Grate courgette & add to a plate, using a paper towel drain as much water as possible.
- In a medium bowl add tuna, courgette, egg, mustard, salt, pepper, thyme and paprika.
- Mix well and mould into a burger shape. Can add flour if needed to help. Set aside.
- Cover potato in plastic wrap and cook in the microwave.
- While potatoes are cooking, in a pan using some olive oil cook burgers until crispy on the outside.
- Serve with adding some yoghurt on the potato.
